A Salad Fix

Almost three weeks into this new year. Already! Dare I ask how the resolutions are coming along? Well, if the word “diet” is anywhere among your list, maybe this can help. It has been for me.

The $4.99 deal at Wendys’ (or as my four year old would say, “It’s not fast food, it’s Wendy’s). You get a half size salad and a large drink (go diet).  I so much enjoy this Apple Pecan Chicken Salad. It has a little bit of everything in it—greens, chicken, apples, pecans, cranberries, and bleu cheese, with a pomegranate vinaigrette. All that for only 340 calories!

At least once, maybe two times a week, I get this for lunch. I’d actually eat it more often but I just can’t spend that kind of cash everyday. What to eat for lunch is where I get the most stumped in eating calorie conscience each day.  Breakfast is easy: healthful oatmeal or toast with peanut butter, fruit, nonfat yogurt.  Dinner is also easy: one of the many low calorie meals I’ve collected (that I’ve been wanting to share on this blog).  So this is a great, quick lunch (or dinner) solution!

the salad does look yummy. i LOVE pecans and apples in my salad. You could easily make that yourself and put into containers for lunch. infact, I just might do that!

I also like Spinach and strawberries for a salad, add some sweet onion and a protein... MMMmm
